you know, you could make it where you don't get the crispy noodles on top..
you could use a cookie cutter that is the same size as the (biggest part of) the cupcake tin...
layer it the same way, but it'll be a perfect fit!

also, you could pull them out of the tins and put them on a cookie sheet and freeze them, then store them in a gallon sized freezer bag for a nice little home-cooked snack, or even make co-workers jealous and have it for lunch! just put it in the microwave for about 3-5 minutes (I haven't tried it yet... they haven't made it that far!) just like a store-bought frozen meal, and ta-da! instant goodness. I'm going to try it tonight, but (so sorry for this) with my dad's (and my favorite) lasagna recipe. he usually makes me a HUGE pan of it (and pre-cuts it into single-serving-squares) and freezes it so that I can have home-cooked meals anytime. and, he also does this for the fire department so that they won't starve when he's not on duty  Grin

I like the crispy bits too!! I actually ate one cold the next day and it was quite good - kind of like having cold pizza Smiley.

well, I tried it out... you'll need to microwave them for 3.5 minutes to get the inside nice and hot.
or, if you have a REALLY picky eater who doesn't like things re-heated (*ahem* my darling SO), just put them on a cookie sheet (on a bit of foil so you don't have a huge mess to clean up) or back in the cupcake tins, and bake at 350 for 10 minutes.


(long story short... I have to "trick" my SO to eat re-heated leftovers. he hates it when I microwave leftovers. he says he can taste the difference. I think he's nuts.)  Grin

this is pure brilliance! not just for portion control and personalization, but wow, you could freeze these pretty easily, i bet.... and well, i don't know about the rest of you, but i think the crispy noodles on the edges of lasagna are the best part anyway!  Cheesy

I am totally inspired right now.
I have two little kids and trying to cut a "kid sized" piece of lasagna out of the pan is a PITB! Also - everyone in my family always fights over the edge pieces because we all love that little bit of crispy noodle on the edge - this way everyone would get some! Absolutely brilliant!
