Topic: first shot at corned beef and cabbage, crock potted  (Read 2670 times)

I wanted to give corned beef a go for St Patty's Day.  Wink

I combined a mix of recipes I found online:

1 4lb corned beef brisket
4 cups apple juice
2 lbs of red potatoes-unpeeled
1 head of lettuce-cut into eighths
1/2 bag of pre-cut carrots

I placed the beef in the bottom of the crock pot. I put the vegetables on the top and sides and poured the apple juice over the top. Covered and cooked for 8 hrs. It was nice and tender. When I tried to remove it from the crock pot, it broke up, so instead of slicing, we just peeled of strips. Here is the delicious end result!

it does look good.

we used to do a quick version of this using canned corned beef, diced potatoes, carrots, and shredded cabbage. we simply saute the corned beef, add some water, let it simmer and dump all the veggies until it cooks. it used to be a "it's late. i'm hungry and we have nothing to eat" quick fix.

adding the apple juice sounds interesting.
