I want to make some headbands for my newborn daughter, but I want a stitch that is soft and stretchy (as she will be laid down most of the day, I don't want them to be uncomfortable). Knitting is usually soft, but unfortunately, I can't knit

Usually the trick to making crochet soft and stretchy is having a good hook-yarn combination (go up a few sizes of hook and see what happens).

Knowing how to do chainless foundation stitches instead of starting with a base chain, will also help keep things stretchy.

I second the hook/yarn combination.  Also, choosing a finer yarn will definitely cut down on uncomfortable bulk.  Caron Simply Soft and Bernat Baby yarns are my personal favorites for these, and they work well with an F hook.
