Winter Picnic Help

So my first date with my man was in winter, to the river with a bonfire and a bottle of wine.
We are coming up on our one year and I'd like to recreate that but since he has to work all night, I thought I'd do it in the morning as a picnic style thing.
I was going to make a delicious breakfast pastry thing, sparkling cider and juice for a fake mimosa (he does have to work after..). But other than that I'm stuck. I wanted to surprise him but he let it slip last night that he was planning on recreating our date there as well.
Now I need some ideas! Gift ideas, picnic ideas, surprise ideas, ANYTHING! I want this to be special because he does SO much for me, and I feel like I don't do nearly enough for him.
For our 6 months I made a manly scrapbook of our first 6 months together and ready to place pictures of the next 6 months in. I was thinking I'd steal it back and finish it, but obviously I need much more! Thanks guys! =)

How about compiling a mix cd of favorite songs you share?  A jar of hersheys kisses for him to take from your morning picnic to work with him with a note that he is taking your kisses with him to work?  Tuck a card into his car or briefcase when he isnt looking for him to find later in the day. Make him a 'love jar' - a decorated container filled with loving thoughts, affirmations, reasons why you love him, quotes, memories, etc. with instruction card for him to draw one whenever he needs a little reminder of love.

Haha, great minds think alike! I love those ideas so much that I've actually done most of them.
The only thing I can think of is the 365 reasons why I love you in a jar. But I did something similar with the jar/wine bottle theme.
