Grilled Apples

Apples (cored and each cut crosswise)
Orange Juice
Fresh Mint leaves (chopped)
Fresh Mint Leaves for garnish

Mix orange juice with honey and chopped mint leaves.
Marinate apples slices for at least 1 hour.

Turn on the grill.
Place apple slices on grill rack.

Grill 2-3 minutes on each side.
Arrange apple slices on a serving bowl
Pour with any remaining marinade.
Garnish with fresh mint leaves.

Fast Minted Pears

1 can of pears in light syrup
Green food coloring
Fresh mint leaves

Open can of pears, drain.
Color the syrup with a few drops of green food coloring and mix in chopped fresh mint leaves.
Arrange pears on a serving plate.
Pour green syrup over pears and garnish with fresh mint leaves.

If using fresh pears:

Ripe pears, peeled, halved and cored
In a small pot or skillet, bring the sugar and water to a boil.
Reduce heat.
Add food coloring and chopped fresh mint leaves (or mint extract).
Place pears in syrup. Simmer, uncovered, for 5 minutes or until tender.
Place pears in a serving bowl; pour syrup over pears.
Garnish with fresh mint leaves.

Ooh.  I've been totally wanting to grill more fruit this summer (I've only done pineapple) -- these look completely scrumptious.  With a little vanilla froyo and a drizzle of caramel sauce.  Yessss.
