Well i guess i could help as i'm a guy with a flair for craft Smiley
Here are the one's i love to make (Yeah i'm a guy again :p)

-Paper/Tissue flowers, you may want to show him how to make origami flowers instead Smiley

I also find these quite decent, its not my site nor am i endorsing it, but i find it worth time!
Downside - No video tuts, but its too easy Smiley

You could make frames or circles and decorate the interiors as per your likings, i wouldn't say its manly, but it aint girly either, unisex it is!

How squeamish is he, cause taxidermy is definitely manly and really does not take up a lot of room.  A male craftster here (forgot his screen name) does some interesting stuff I especially liked his wunderkammer and he also make a figiian mermaid out of a fish that looked pretty cool!

What about wire crafts? If he doesn't have them already, get him some good pliers and nose pliers (the rounded ones for making loops, I can't remember the proper name) in different sizes. If his are rusty get some new ones. I use wire to make trees, loopy handwriting style names, jewellery hooks, hooks and eyes for furniture and heaps of other handy crafty stuff. Whittling is heaps of fun! I recently made some quick stick toggles, it took me less than an hour to make six and sew them onto a faux fur jacket that had a broken inset zipper (there was no way I was unpicking along the vinyl backed seam and trying to sew a zipper back into fake fur!)
