Papas Rellenas - Stuffed Potato Balls are a favorite Cuban snack



Ingredients:
Potatoes (brown russet potatoes OR red skin potatoes variety work best)
2 - 3 eggs
Breadcrumbs (Italian style)
Vegetable Oil (for frying the potato balls)
Stuffing (ground beef, ham, cheese)

Ham in an Italian sauce (for stuffing)


Recipe

ham (cut in small pieces)
onion
red bell pepper
1 tomato
4 oz tomato sauce
2 cloves of garlic
Fresh basil
Salt, oregano and pepper to taste.

In a frying pan, heat the olive oil.
Add the onion and cook until soft.
Add the garlic
Add the tomato, tomato sauce and ham.
Season with salt, oregano and pepper.
Add the basil leaves.
 Mix thoroughly.
Turn the heat to low and simmer for a few minutes.
Remove from heat and allow to cool.

Potato Balls
Place potatoes and salt in a pot with water.
Cover and boil at moderate heat for 30 minutes, or until potatoes are fork tender.
Drain and immediately mash or put through a potato ricer. Do not add any butter, or liquid.
Cool to room temperature.
Spread a spoonful of the potato dough mix in the palm of your hand.
Make an indentation in the middle and stuff it with the meat mixture.
Cover the filling with more mash potato
Shape into a ball.

Beat the 2- 3 eggs
Dip the stuffed potato ball into the beaten egg, and then roll in the breadcrumbs until well covered.
Repeat until all mash potato is used up.
Deep-fry the stuffed potato balls until golden (about 2 minutes).
Remove and drain on paper towels.

These are so simple to make, my husband and I make them with cheese since we are vegetarian.
We also make them with platanos maduros for a sweet side dish!
