Just posted this recipe on my site a few minutes ago. Thought some people might be interested, especially because the crust is gluten free Smiley



Full Recipe & Directions:


   * Raw Almonds / 2 Cups Almond Meal (which is just raw almonds ground up into a fine flour)
    * 1/4 Cup Pure Maple Syrup / Alternative natural syrup
    * 1/4 Cup Pitted Dates (I pre-soaked them in a little water)
    * 1 Cup of Unsweetened Canned Pumpkin Puree* / raw shredded pumpkin (*using canned pumpkin puree will not be raw)
    * 1/4 Cup Almond Milk (unsweetened)
    * 1/4 Cup Brown Sugar (may want to test sweetness and add 1-2 more tbs) (you can use another sweetener if you wish, this is all we had in the house at the time)
    * 1 tsp of both Cinnamon Powder and Pumpkin Pie Spice
    * 1 tsp Pure Vanilla Extract

It turned out very good when I made it, you just need to give it a bit of time for the thin layer of iciness to go away when you take it out of the freezer, and for it to soften up a bit.

I'm not sure why you call this raw because the pumpkin at some point was cooked- Do you mean no bake?

Sorry - Yes, you're right. I should have added that you can make a puree with actual raw pumpkin or use canned, which would indeed be cooked. Thanks for bringing that up.
