While this is not specifically a vegetarian thing, it was in my case (my being vegetarian) and also ended up being vegan and gluten-free.  Whatever your needs, etc. 

We filled our summer rolls with rice noodles, tofu, green apple, lettuce, and carrots.  Delicious!

1) Prepare all ingredients by slicing them thinly (julienne). 

2) Wet rice paper wrapper under warm water.  Let sit 1 minute to soften.

3) Put fillings in.  Then start wrapping.

4) Be proud of yourself.  Very, very proud.

5) Serve with peanut sauce or chili garlic sauce.

Enjoy!  This was our first attempt.  I was really scared we'd mess everything up, but they were delicious and fun to make.  You can put anything in them.  I'm already thinking of fake chicken (Quorn), green peppers, and water chestnuts.  Who knows!

oooh we call them fresh rolls, and love them to death!!  these things are absolutely delicious.  Have you tried a Chinese BBQ sauce on your Tofu yet?  That's our fav marinade/sauce for them (We eat with chicken or pork, but It tastes good on everything, so tofu would be no different!)

These look delicious!  Must search for some rice paper wrappers!!!
