In case you were wondering, coconut ice is a pink and white treat commonly found at school fetes in Australia. I made some for my family at Christmas, with this recipe, http://www.bestrecipes.com.au/recipe/Coconut-Ice-L1392.html, and my daughter loved it. Don't worry, I made her brush her teeth!
This recipe has a lovely picture, but I don't use this one because I don't like the copha (I think it tastes weird!) http://www.taste.com.au/recipes/3044/coconut+ice

So I named the quilt that because she loved the coconut ice so much, and because it is pink and white and kinda sickly sweet.
