I wanted some over easy eggs earlier but usually eat them with toast or hashbrowns...and I'm trying to not eat too many carbs for breakfast and lunch. I decided eggs over veggies sounded good, but didnt' have any zucchini or cauliflower, which would have been my first and second choices. I decided to go for spinach and mushrooms, added two pieces of crumbled bacon, a very small sprinkle of freshly shredded parmesan, topped with my eggs and yum!  The yellow stuff at the bottom isn't oil, it's a little orange muscat champagne vinegar I sprinkled over the spinach. I love sweet and savory usually, but next time I would probably use red wine or apple cider vinegar, it was a bit too sweet. I would also add some cayenne or red pepper flakes to the spinach next time, I only added garlic.

Veggies are great for breakfast! It's a great way to kick start my body instead of eating empty stuff. All that protein (egg, spinach, mushroom, bacon) would keep you full for ages.

*drool* That looks so yummy! I love veggies with breakfast, my mom always made a lot of veggie stuffed omelets but I've never tried spinach with over easy eggs. Definitely going to try this soon!
