I take the ripe banana, toss the peel, saran wrap the whole banana and freeze it.  Then I eat it like an ice pop - They taste just like those Froze-n-fruit ice pops you buy in the store.

My favorite banana recipe is from camping many moons ago. The riper...the better...

Take a banana and slice open the top of the skin...making like a "door" (I know that's wierd way to put it, but its the best i can do  Wink)
Scoop out a little of the banana and fill with chocolate chips and marshmallows. Replace the skin and wrap the whole thing with tin foil. Stick it in the fire (or on the bar-b-que) for about 5-10 minutes, turning frequently. When it is all done, open up the foil, but dont get rid of it. Its a messy treat and the foil acts like its own bowl....Yum.....I need a campfire.

Here are a couple a  rasta  Ital cook ups  with  banana.

Fried ripe bananas
for a sweet start  in de  morning
peel &cut  bananas lenght wise in half.
coat gently  w/ corn meal,
dip bananas in coconutmilk fry
w/oil on both sides until  golden brown

Another simple dish is bananas  baked  with lime/orange juice, honey crushed pimento berries and unsalted butter/vegetable margarine
grease an oven proof  dish and arrange bananas in it.
Mix honey, lime/orange juice and crushed pimento berries. pour over bananas and  sprinkle  pimento and dot with the remaining butter
bake at 200 degrees for 15 to 20 minutes.
And Ladies you don't have  To  worry fatting factors because de lime juice  is  good  fo  cutting de  fat out

if the bananas aren't too ripe - meaning - you can still slice them into pieces and they aren't mealy yet - banana pudding with nilla wafers is always amazing.  when i go to a party - i'll put it in an inexpensive trifle bowl - and then leave the bowl behind as a hostess gift.

banana pudding with nilla wafers

1 1/2 cups cold water
1 14 ounce can sweetened condensed milk
2/3 cup instant vanilla pudding powder
3 cups heavy cream
one box nilla wafers
3-4 medium bananas sliced

on the low speed of an electric mixer, blend the water, milk, and pudding powder until thoroughly mixed, about 1 minute.  refrigerate for at least 4 hours (or overnight) until firm.

in a seperate bowl, whip the heavy cream until soft peaks form.  gently fold the pudding mixture into the whipped cream until well incorporated.

in a large bowl, starting with the wafers, make five to six layers with nilla wafers, sliced bananas, and then the pudding mixture, until all of the pudding mixture is gone.  end with the pudding and decorate with crushed wafers on top if desired.  refrigerate at least 30 minutes before serving.
