Since we went vegetarian a year ago our neighbors/friends have been a bit nervous about dinner invitations.  A few months ago, I had them over for Ratatouille with ricotta herbed dumplings.  They love it.

Tonight is homemade pizza.  I make the sauce and the dough.  Then I put a buffalo mozzarella and cherry tomatoes and bake.  Once out of the oven I top with arugula.

The salad will be a veggie salad with the Three Herb Dressing from Vegetarian Planet.

And for dessert an apple pie made totally from scratch (right down to my freshly ground cinnamon) with ice cream for those who want it. 

I also have started serving a great little juice cocktail when guests arrive.  Tonight will be blackberries with rosehips.  Delish.  If you drink you can add a little vodka. 

And that is how you feed non-vegetarians so they can't complain that they are starving because there was no meat.

Good stuff! Veg food doesn't have to be boring, bland or all tofu. Good on you for proving that to a few more people.

Dinner was a hit. They took pie and salad dressing home.   

I love the fruity cocktail because it has become my "thing" we hosting.  I love having a signature.  ;-) Wink

Sounds amazing! I hold a vegan pizza night with my boyfriend and his flatmates, usually what goes down the best is the potato pizza and a mushroom garlic concoction.
