This morning I made veggie frittata.

I used 4 eggs...so this isn't a vegan dish.  I added fresh spinach, sliced white onions, mushrooms, sliced roma tomatoes. Season with sage, salt and pepper.
I sauteed the onions in a pan, and then added the mushrooms and only flipped them twice to brown the mushrooms without making them mushy.
Then I laid 2 cups of spinach on top of that to steam slightly.
Add beaten eggs on top of the, making sure the egg is spread evenly, add the sliced tomato and top with parmesan cheese. 

Bake in the oven, covered for 20 minutes at 350, remove lid and bake until cheese is slightly brown....you can put it in the broiler at this point if you are super hungry

mmm..i think i've found Sunday mornings breakfast.  I have some fresh spinach left over after I made my Lentil soup and this would be perfect.  I just wish I had tomatoes too Sad .  I wonder how feta would taste in your frittata.
