I adore these cookies, and make them all the time (almost exactly the same recipe, minus the fresh ginger, I'll have to try that next time!).  Though, my family always called them gingersnaps growing up.  You can imagine my surprise the first time somebody offered me a store-bought gingersnap and I got an entirely crunchy hard cookie.  I much prefer my cookies chewy.  Anyway, hooray for sharing the spice cookie love!

I'm a christmas cookie baker and give cookies out every year. I go around getting requests and make their cookie for them and each year I try a new cookie recipe. The spice cookie is a favorite of mine and my mother actually requested it this year because she too missed it. I love the smell and taste of it.  Grin

I love spice cookies! Thanks for the reminder about how fantastic they are (and so much better than store bought ginger snaps, although I am a fan of those as well).

YUM!!  Are you reading my mind or something?  I ran out of jars while making jelly and now have 2 pints worth of molassas in my fridge.  I am definitely making these cookies.  They sound divine!!

They smell like Xmas to me. I love a gingerbread biscuit this year, now I have a little man cookie cutter too so am going all out!

p.s. I always make ginger biscuits for newly pregnant friends as I found the ginger calmed my morning sickness - maybe this could be phase two of your action plan, roll out the spice cookies all year round?
