I have been wanting to make another tut for awhile now. Tonight we were making nacho's and I thought DUH! We make our own cheese sauce and get lots of happy people when we make it for guests. So I am sharing it for all of you to make happy family and friends!

1/4 Stick of butter
1/6th cup of flour (half of a 1/3)
1 cup milk (we use 2% or vitamin D)
1 cup of cheese (Read tut before measuring out)
Paprika and red and black pepper to taste

I also strongly recommend a nylon whisk and non stick pan. This stuff will stick and become like glue when it cools. The nylon whisk is flexible enough to get in all the crevices of the pan, and mix well  without scratching the pan. We got ours at Target for less than 5.00 and use it ALL the time.

Melt Butter in pan on medium heat,

Add Flour and salt and whisk together till smooth:

Remove from heat and add milk then return to heat, (if you do not remove from heat it can scorch in the time it takes to measure milk and add it.)

Stir Constantly till well blended, slightly thickened, and when you stop stirring it starts to bubble. It will be steaming hot.
Here's how you can tell it's thickening properly. the edge of the pan will crust a little and the milk will stick a little:

Add cheese, Do not pack the cheese to measure it (I measured in the same glass that I measured my milk in thus the white specks).

Stir till cheese has melted.

(Yum cheese! I love watching it melt and get stringy.)
We've found this to be the best cheese for flavor as it's mildly seasoned:

But as long as the bag says this:

you are fine.  remove from heat, add seasoning:

 first red and black pepper:

And Paprika:

 and stir in.

Turn burner on low, Serve and enjoy!

I highly recommend you rinse your pan, and soak it before washing. It helps so much(even on nonstick pans)!

Ooh that sounds so good Elia! Thanks for sharing. We're obsessed with Tostitos Cheese Sauce (Salsa con Queso) but it's kinda spendy.

This is not to expensive at all. A brand new bag of cheese on sale runs about 2.00 And Kraft puts out coupons on their facebook page occasionally too. so add them to your friends list and check frequently!
And it will last through at least 3 batches of nacho's.
This amount of sauce is enough to drizzle over nacho's for me and the hubby, and have some left over. My mom has had good luck reheating it but you have to reheat slowly or it will burn.

It's a nifty little sauce very reminiscent of a bechamel.
Another nifty cheese sauce I've discovered:

Heavy cream
2 slices American cheese (aka processed cheese, little kraft square cheese that's the staple in grilled cheese)
pinch garlic powder
pinch s+p
pinch of cayenne (or chipotle powder if you have some around)
Bring the cream to a soft boil then add the cheese and seasonings. You can substitute garlic powder for real minced garlic. Do not sub the cream, you need the fat in the cream for this to work.

Spice *IS* the spice of life.
