does anyone want to share their tried and true ginger bread house recipe?   This'll be the first one I make from scratch so I don't want to risk a crappy cookie dough that will just fall apart.....  I've got plenty of recipes I just don't know which is the best for not spreading, not being to soft, etc.  I'll love you forever Grin

Belladune; My Mom, who's a professional baker, says the key is not to roll it out too thin. Your dough needs to be a minimum of 1/4" thick. She says she uses thickness guages.
I asked, but she's not willing to share recipies, since she makes money with them.
But I Tried!
Maybe the way to go is pick a recipie, and test it with cookies. The issue really should be in moisture content, and baking time.
The more eggs,and shortening, the softer it's going to be.

In our 25 years of making a gingerbread house, we always experiment with a new recipe.  There are lots of books about gingerbread houses out there, all with great recipes---find a few at the library or bookstore and go from there.  The most important step (and I'm giving away trade secrets here---) is to bake the gingerbread at least a week before decorating.  You want it to sit out and get hard for at least a week---this will result in a much stronger house!

A couple of nights ago I helped my kids make Graham cracker houses...gave me the itch to make my own. But I am a little dissapointed that I am no longer able to find the candy corn santa clauses we used to get when I was a kid. WTF. I *might* participate in this challenge but I know I would get my rear beat into the ground by all these fantastic craftsters. I just don't have the imagination(I am a pessimistic realist) to pull off what ya'll can...but heck, who knows. If I can get any house made without my kids or dogs destroying it would be a miracle LOL Smiley
