I've tried to make it, but I can't ever get the white chocolate to melt properly and it gets all weird and crumbly instead of smooth and purdy... still tasted good, but was more of a hassle than it should've been.

white chocolate is tricky.
#1 it's not really chocolate, so it acts differently and heats differently
#2 it's really easy to overheat any chocolate/chocolate substance without a double boiler

basically use a candy thermometer and a double boiler and you should be golden. Also, using a higher fat-content/less waxy chocolate is always a plus. I get mine at the bulk section of my froufrou organic market (callebaut brand I think), and it's actually not that bad price-wise. Costs me about 5 dollars a batch (like 2-3 lbs total)
