My mom was raised in a kosher home...so in her adult life she has become a lover of bacon and ham.  For her birthday, I decided to try out a recipe that I've been looking at for a while.

The only change I made was adding pieces of candied bacon to the top.

I don't personally like bacon much, but I made an alarming discovery:  candied bacon is DEEEELLLIIIISSSSHUUUUSSSS...and probably too easy to make.  Coat bacon in brown sugar, put it on a drip tray (coated in nonstick spray) above a cookie sheet and pop it in a 350 oven for 20-30 minutes or so.  Then I let it cool and I broke it into pieces for the tops of the cupcakes.
