For me, the best part of pumpkin carving is toasted pumpkin seeds!



They are super simple and very tasty.  Here's how we do it:

Separate the seeds from the pumpkin "guts."



Wash your seeds.



Lay out to dry on waxed paper overnight, or until all seeds are dry.



When your seeds are nice and dry, collect and measure them.  I had about 2 cups:



The recipe says for every 2 cups of seeds, use 1 1/2 tablespoon melted butter and 1 1/4 teaspoon salt.  I melted my salt and butter together first:



And then poured it over the seeds.



Then lay them back out on shallow baking pans, and bake at 250 degrees for about 2 hours.  I start checking them after an hour.  They go from perfect to burned quick, so I keep an eye on them.



And now you have delicious buttery, salty pumpkin seeds to enjoy!  Ours are gone already!

Wow two hours! I think I usually cook mine for like 15 mins, but at something more like 350. You can also make them on the stove. One year I went all out and made a bunch of different flavored ones. That was the year I found pumpkins on clearance and bought them only for the seeds!  Grin

I love pumpkin seeds!  We had some hot cajun spices to ours...but warning, eating too many (like I did last night...), can cause tummy issues...UGH...but so worth it as they are scrumptious!

I do not dry my seeds--no patience...your tutorial makes it easy for anyone who has not tried to make this simple and yummy snack!

Absolutely one of my favorite things!   Cheesy  Iput the seeds striaght from the pumpkin into the oven, and always eat enough to make myself slightly sick.   Tongue

 I just made these and they are fabulous! The buttery flavour is so yummy and they remind me of how my Mom made them when I was a kid. Every year I toast my pumpkin seeds and end up disappointed.

Your recipe is perfect low and slow in the oven and drying them over night is well worth the efforts. thanks for posting this!
