Is there anything useful to do with the stringy pumpkin "guts?"  Huh About to carve our jack o' lantern and bake some pumpkin seeds and was just wondering if this part was in some way useful...

The only thing they're good for is the compost heap. They can make you very sick if you try to eat them.

Thank you. Did not know they'd make you sick  Undecided Lol, I figured they'd end up in the compost

Yep.  Smiley Not -bad- sick, but tummyache and queasy sick. The seeds have trace amounts of heavy metals in them (so don't eat too many at once!) and the 'guts' have it, too, but in a slightly higher concentration. It takes a few bites to get that sick feeling, but it's just better and safer not to try. The meat of the pumpkin is fine once it's cooked.
