Oh all these are sounding sooo delicious!! We made the spice cake and can of pumpkin one, was supposed to be muffins, but I guess we did something wrong! Sad lol but it is perfectly okay with us because now they taste like mini pumpkin pies!! Smiley

Thanks sunshineravioli for posting pumpkin chocolate chip cookies, thsoe are one of my favourites. 

For anyone asking squash can be substituted for pumpkin very well (some people even think it tastes better). 

I always seem to lose my pumpkin pie recipes... it started with a newspaper clipping.  Here's the one I made this year and it turned out really well.  I added nutmeg and it took a little longer to bake than it says.  I used baked and mashed pumpkin and 5% cream (anything with some fat works).

I tried sunshineraviolis pumpkkin cookies yesterday and they are delicious! I'd never had any before but this sounded easy. At first I thought it didn't taste spicy enough, but then realized they were more like less sweet chocolate chip cookies with a hint of spice and now I can't get enough. Cookies with vitamin A. I can so justify eating these. Thanks for posting!!

For all the people out there that cant get 'proper' pumpkins like the ones in the states!
I'm in Denmark and looove pumpkin soup and pie and have tried and tried to figure out how to make it work - not much info out there!

the trick about making your own canned/frozen pumpkin here are great, and you can use the field/orange halloween ones the sell here, just pick the smallest ones, they are best (not grainy and has more flavor)
they can be used because they have not been specifically bred here for looks only (yet?) as they have in the states, where halloween/field pumpkins are normally larger, round and flat bottomed with a bland/watery taste

do NOT use the ones called decoration pumpkins (small fist sized) they are extremely bitter and some are treated with very harsh chemicals or wax to get them to look the way they do and keep for longer!

you can use butternut squash but the result will be very different as the butternut squash has a very specific and sweet type of flavour, so don't expect a typical pumpkin flavour:)

sometimes in the fall we can get Hokkaido pumpkins here in the big super markets (looks like a small field pumpkin) and they work well too!

and if you cant get evaporated milk, just use full fat milk (or cream if you like some fat on your bones!:P )

My pumpkin lasagna based on throughthelooking's recipe is oven the oven right now, and while it isn't directly a pumpkin recipe I must recommend roasting pumpkin seeds with Cajun spice and salt on them... they are very tasty.

I've made those before too (although I used yellow cake mix and a bit of pumpkin pie spice) and it came out more of the consistency of brownies (if brownies were made from delicious, delicious pumpkin Cheesy), which was perfectly fine with me! Try slathering them with cream-cheese frosting, oh myyy, they are delicious and sooo easy!
