Thanks for a simple yet yummy looking recipe! As a novice cook, these types of recipes with pics truly help me a lot!  I just printed it off and only have to get puff pastry to make it!

alwaysinmyroom - let me know how you get on with the recipe!

With the pumpkin half I had left tonight I made a pumpkin & chick pea salad with tahini sauce.  It was inspired by a recipe on the BBC, though I added courgette (zucchini) and green pepper, a salad base and made the tahini sauce with yoghurt.  For my instructions see here.



I am really enjoying this pumpkin season!  I hope there are still some left in the shops so I can go pumpkin OTT!  Cheesy

HEN IN A PUMPKIN! (I am begging for someone to get that refrence)

Kidding. I always get ideas for strange food combos and then Google them hoping someone else had made it up before me. This has only failed once...so I had to do something about it. Pumpkin chicken pot pie. NOT pot pie in a pumpkin. Pumpkin chicken pot pie. I have made it at least twice but I don't think I have ever written down the exact recipe. I haven't made it in a year, and I am not very good at giving directions (I'm a bake it til it's done type of gal) so I hope this makes sense and that I don't skip anything.

You can use soup mix frozen veggies or fresh, I have done both (bagged frozen soup veggies are definitly easier) Peas, carrots, celery, corn, green beans, onion, give or take if there is something you hate on that list. Soften them by cooking in a little chicken broth.

I cook and chop chicken tenders into tiny chunks...the raw chicken I season with pumpkin pie spice...or cinnamon cloves and nutmeg and black pepper.

mix together
1 can cream of chicken soup
1 small can pumpkin
more pie spices and pepper
cooked veggies
chicken

then put it in a casserole dish...I believe the one I use is 9X13
mix up boxed pie crust (or your own recipe if you's like) and make a lattice on top.
bake until golden.

That is just the burner under the clear dish by the way lol.

When I cook dinner, it is a secret from my boyfriend. I rarely tell him what I am making...it really keeps things interesting. When I was making this I kept giggling to myself imagining his reaction. We are both pumpkin fanatics! He was completely blown away.
This is a great thread, I hope to surprise my boy with some (if not all of) this stuff!!!

Wow, that salad looks amazing!! I don't have a great recipe to share, but I did make my first pumpkin pie this year from an actual pumpkin (!!!!). I gave my neighbors some and they said it was delicious. I got the pumpkin at Trader Joe's and just used the recipe from the sticker on the bottom  Grin Next time I'll remember to strain the extra water out of the pumpkin pulp so it's not all soupy!

My husband really likes adventurous food, and I LOVE pumpkin. Might have to try the pumpkin chicken thing. Though I'm probably too lazy to make a lattice crust...

Use the Pillsbury refrigerated pie crust and a pair of scissors or a pizza cutter!  It is so easy to do the lattice that way (I learned this tip on Craftster! Cheesy)...it is easy and pretty...and pretty makes most foods taste so much better! Cheesy

I made PepsiTwist's Pumpkin Roll!!!  It took some time but it was worth it!  I made four and gave three as gifts...everyone raved over the yumminess!

Here is what is left of the one I put in my fridge...I took the one that broke up a bit. It isn't pretty but it eats "good"! Wink
