These swans are are a lot easier to make then it looks - there is one basic step that is repeated, then used to build the swan. This guy was made with wrapping paper, but any thin paper can be used.

There are some books (like this one http://www.amazon.com/3D-Origami-Step---Step-Illustrations/dp/4889960570/ref=sr_1_1?s=books&ie=UTF8&qid=1285874234&sr=1-1) that give designs for all sorts of shapes with the same basic piece. I'm going to try a penguin next!
