I love love love McDonald's sausage burritos on the Dollar Menu. The problem is that, in the mornings, I don't have time to run through the drive through. After seeing a tutorial for knock-off Egg McMuffins, I thought the same concept could apply to the sausage burritos.
You need:
6 eggs
6 slices of cheese
1/2 roll of sausage
1/2 can of diced tomatoes
12 small tortillas
Wax Paper
Makes 12 servings
In separate skillets, I browned half of the sausage and scrambled six eggs. I drained the diced tomatoes and mixed half of the can with the scrambled eggs. I drained as much of the oil from the sausage as possible and let the eggs and sausage cool down.
Once the food has cooled, I assembled the burrito. I placed half of a slice of cheese on the tortilla and then sprinkled three spoonfuls each of sausage and eggs onto the cheese.
I am not an expert burrito roller upper so I found this to be the most difficult part of the process. I rolled up the burritos and then rolled the burrito up in wax paper.
After rolling the burrito up in wax paper, I placed it in a freezer bag. I think it is really important to let your food cool down so at this point there will be no condensation and when you microwave your burrito later on your food will not be soggy.
And there you have it! Easy sausage burritos to grab on the go! These microwave very well and are an awesome alternative to fast food.
