I grew up using both a pressure cooker and hot water bath when canning and to be honest, pressure cookers scare me. It only takes seeing one of those explode to make you wary.  Embarrassed  (Dad only ever used that cooker outside after that clean up.)

As a result I only do hot water bath now.

This is an easy recipe as long as you watch it closely in that last boil stage. You wouldn't want to see the mess that I made on my stove top! lol

Looks wonderful!!  Such a pretty color.  I've made spiced apple cider jelly before, but this looks like an even more fun twist on the idea.

I glanced at the recipe, and whoever thought to use red hot cinnamon candies is a genius -- what a great idea!

I was thinking this might make a really nice glaze on pork or ham.

I helped my mamaw make apple butter every year. We did it outside in a HUGE kettle over an open fire. She would "pay" the grandkids with a special batch of the butter spiced up with these Imperials. I've tried over the years to recreate it, but with no luck. I think it's the apples. Her orchard had some really old trees and no one knew what type they were beyond super tasty. Smiley

Thanks Troublet!  Well I'm taking the plunge!  I decided to get a fairly inexpensive system from Target online. Smiley  It's only $30 and I'd have to spend at least $15 for the canning stuff I'd need.  I'm not too scared of pressure cookers...we used them in the lab to autoclave our media.  But I do know what you mean.  Smiley 
Now off to see if I can't find some canning jars at Target!

I got all excited thinking it would taste like a candy apple, but it looks like its called that because of the red-hots that are in it.  Does the final product taste very cinnamon-y?  I don't mind a bit of cinnamon taste, but if its overpowering, I might have to skip this.  Is it very sweet?

I don't think it's overly sweet because I don't like anything like that. I do however really like cinnamon so I can't answer that part of your question. Smiley

I'm glad you liked it krafty!

I think I'm going to give pepper jelly a try this weekend. You can color it green and it would be a great contrast to the red candy apple in a gift basket. Smiley

Thanks for posting this!  I was surprised but happy to see that you use apple juice - no peeling, chopping, and whatever else one does to get juice from an apple!  I've only been canning a couple of years now, and it's awesome to see people doing it.  It would be sad if it disappeared!  I can't wait to try this recipe!
