I read somewhere that this is called an infinity knot, but I looked that up and found nothing. Any help (even just the correct name) would be greatly appreciated)

I think I've found it! I know I've seen this knot before, but can not, for the life of me, remember the name. But trusty Google has found what I think is the correct knot!  Here is the link, I hope it's right. It's in miniature, for a dollhouse.

do a search for TIAT on youtube.com  that stands for Tying It All Together and he really knows his stuff.  jit may also go by eternity knot.  even so, his stuff is fascinating to watch!

You might want to search up Chinese Knot tutorials too. There are books (http://www.amazon.com/Chinese-Knots-Beaded-Jewellery-Millodot/dp/0855329688/ref=sr_1_1?s=books&ie=UTF8&qid=1282173099&sr=1-1) - Amazon has tons of the Chinese Knot books in english. Have fun!
