Don't be a soap licker

I had a couple of almost overripe peaches in the fridge so I decided some spicy fruit salsa was in order!



Ingredients:

2 ripe peaches (drop in boiling water for 30 seconds to remove skin easily), diced
1 tomato (or more, that's all I had), diced
1/4 large onion, diced
1 large clove garlic, minced (unpictured, almost forgot it to add it!)
large handful cilantro, chopped
1 jalapeno pepper, minced
lime juice
kosher salt
red pepper flakes

Combine all ingredients through lime juice and combine well. Add about 1/4 teaspoon each of the salt and red pepper. Taste and add more if necessary. My jalapeno pepper was really wussy so I added more red pepper. Let the flavors meld together in fridge for several hours before eating for best flavor.

Serving suggestions: taco chips, over chicken or fish, bean salad

Don't have peaches? Try mango, pineapple, other favorite fruit, or even a cucumber!
