After putting up a very tall fence, the deer have FINALLY stayed out of my garden this year.   Cheesy  So, since we have tons of zucchini:



I am always thinking up new ways to prepare it.   Wink  In about an hour, you too can have a delicious soup.  Here's the recipe:



4 cups low sodium chicken broth
1 14.5 oz can crushed tomatoes
1 pound chorizo(mexican sausage)
1 zuchinni, cubed
1 yellow squash, cubed
1 red onion, diced
1 can black beans, rinsed & drained
2 cloves garlic, finely chopped
1 teaspoon cilantro
1 heaping teaspoon cumin
freshly ground pepper, about 8 turns of your pepper mill
4 T lime juice
Minute Rice Brown Rice, 1 bag cooked

Put chicken broth and crushed tomatoes in a large pot over medium heat.  Add all remaining ingredients EXCEPT for rice & chorizo.  Brown chorizo in a skillet, drain fat.  When fully cooked, slice chorizo into circles and add to pot.  Bring almost to a boil, reduce heat to low.  Cook about an hour until squash is soft, stirring occasionally.  Before serving, spoon a few tablespoons of brown rice into each bowl, stir and enjoy.(I do it this way because the rice will soak up too much of the broth, unless you will be eating the whole pot right away.)

Serves 6.

This looks good!!

Have you tried zucchini bread or muffins to use up some of your "tons of zucchini"? You can always shred/cut up your zucchini and freeze it, too......

Have you tried zucchini bread or muffins to use up some of your "tons of zucchini"? You can always shred/cut up your zucchini and freeze it, too......

Oh yes, since I've been harvesting this season I have made zucchini bread, zucchini muffins, zucchini/oatmeal cookies, zucchini fritters and a few soups...it's a running joke that I put it in everything!   Wink

I'm pretty new to cooking, so I'm not that great, but I came across this soup and decided to try it, and it's so easy and so delicious! I've made it a couple of times, and I love it. It's very forgiving as well; my mum is allergic to onion so I just chuck some celery in instead Smiley
