But what is Skim/Non-dairy milk? (sorry, not a native speaker)
Is that a vegan surrogate? What does it do for the recipe, add moisture? Because then I would love to try some fruit juice instead, I've made cakes replacing milk by juice before and loved the result.

Hi
By non-dairy I meant any kind of milk that doesn't come from animals, such as Almond Milk, Soy Milk, Rice Milk...etc.
That would be interesting to see what it would taste like if you added fruit juice instead, or did 1/2 milk and 1/2 juice. And yes, it adds moisture to the recipe.
If you try it with fruit juice, please comment on how it turns out!

Every time I see a recipe that is "Eggless, butterless, sugarless" or similar I tend to read "Eggless, butterless, joyless" but that looks really good and I love that it has maple syrup and applesauce, yummo! I will have to try it and be proven wrong

Yum!
It's in the oven baking right now
!!! I baked for 30 mininutes at 350F, then lowered the heat to 300F for the last 15 minutes - this worked out perfectly.
I used skim milk and omitted the maple syrup because the dates were PLENTY sweet (added 1 tsp maple extract instead). I was also using fresh dates, so I went through the painstakingly long and messy process of peeling the dates and removing any crystallized sugar. Next time, I'm using the ready-made paste as you did. Using fresh dates probably absorbed less of the milk than the dried, which compensated for the omission of the maple syrup without the batter being too thick. I love how few ingredients this has and would love to try it with different combos of dried fruit.

I promise it's really good! And not just "pretty good considering it doesn't have all these ingredients.."
Hope you give it a try. My oven has been broken for a while so I can't make it ;( But I make raw cakes.. I think I'm going to post my latest one on here now that I think of it.

That's great you used fresh dates... that's always best but when I'm visiting my parents, as I am now, fresh ones are hard to come by. :|
