So last week I wanted to know how to speed up ripening avocados, well now they are all super ripe & I'm thinking of things to do rather than just the traditional guacamole.  This led to having this salad today, which was very very tasty & simple Smiley



Ingredients:

    * Tomatoes
    * Avocado
    * Mozzarella
    * Salad leaves
    * Sweetcorn
    * Balsamic vinegar
    * Olive oil

Firstly, roughly chop up tomatoes. I used cherry plum toms & some big beefy fellas. In a bowl add some olive oil and balsamic vinegar to the toms, and leave to settle for a little while.On a plate arrange some salad leaves (I used a mixed salad leaf pack and fresh rocket). To this pile on the tomatoes, chopped avocado, mozzarella and a sprinkle of sweetcorn. Drizzle a little more oil &  serve. Yum!

avocado and mozz have to be two of my favorite things out there. They are both so  light and refreshing.

Now it's making me hungry to think about it. But I do have fresh mozz and avocados...

Yum! this looks great Cheesy i eat avacados with everything, i especially love putting small cubes of it on top of a spicy pizza after it's cooked Cheesy

It's a real shame i have no mozzarella i really want to eat that salad now!! Smiley

By the way, I use avocados on my absolute favorite sandwich:  grilled cheese, tomato and avocado.  It's super yummy!  Just fyi, since you said you were looking for more ways to use them Smiley

Wow this looks great! I think it'll be my lunch for tomorrow!! yum yum! I just moved to Hawaii and Avocados are in season right now.. (hopefully they're in season year round here.. haven't found out yet) but anyhow, I absolutely love cutting an Avocado in half and eating it with a little bit of soy sauce. I love love love it!!!!!!

I just finished making something that was supposed to be like this salad. I was preparing to make the salad... The local corn was boiling, my lettuce leaves were waiting in the bowl with mozzarella and a chopped up avocado when... uhhhhh, my tomatoes aren't red anymore! Gross. Now what?

Israeli couscous! It was quite delicious. Especially, with a class of chardonnay. Wink I think next time I'll nix the avocado though. It throws off the texture of a salad with corn and Israeli couscous.

Avocado is AMAZING on everything!!! Cheesy Especially on veggie burgers... mmm. My mom always reminds me how fattening it is and I just have to go "SHHHHHHH, I'm enjoying it!"

Love avocados heres mine for the taking

Avocado Salsa Ingredients:
 2 small red peppers, seeded and finely chopped
 1 ripe avocado, diced
 1 short cucumber, finely chopped
 1 small red onion, finely chopped
 1 tbsp coriander leaves
 2 tsp fish sauce
 2 tbsp lemon juice
 4 tbsp olive oil
 1 lime

Method:

In a large bowl, add avocado, cucumber, red onion, peppers, coriander, fish sauce, lemon juice and olive oil. Chop lime segments and add to the salsa. Mix well. Serve with grilled fish or chicken.
