I made flag cupcakes for my aunt Alice! Her birthday is July 4th!



She said her favorite cake is chocolate and fave frosting is cream cheese. But I added a surprise! I dropped a cherry (from a can of cherry pie filling) into the center of each cupcake before baking!





The cake recipe I used is called: Beatty's Chocolate Cake Recipe (I found it on www.foodnetwork.com)

Ingredients-

Butter, for greasing the pans
1 3/4 cups all-purpose flour, plus more for pans
2 cups sugar
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee

Directions-
Preheat the oven to 350 degrees F. **We made cupcakes, so just dropped in red paper liners into muffin tins.

Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans...
**Here is where I carefully dropped 1 cherry (from can of pie filling) into center of each un-baked cupcake.
and bake for 20 to 40 minutes, until a cake tester comes out clean.



THEN for the forsting I made a simple cream cheese frosting:

Ingredients-
8 ounces unsalted butter (2sticks), softened
8 ounces cream cheese (1 pkg), softened
4 cups powdered sugar
2 teaspoon vanilla extract

Directions-
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract

To decorate- I was inspired by Martha Stewart and her patriotic cupcakes:

But, I could not find licorice laces, so I used Twizzler brand "pull aparts" as the long laces that I cut to the proper sizes. And I found, at JoAnn, some blue decorating gel with glitter in it to use for the "stars"!!!!



Then a family member insisted I use some red, white and blue sprinkles they brought to the celebration...so I added those too.



The cake was amazingly moist and rich (from the buttermilk and the cup of coffee) and the cream cheese was sinful! Everyone kept commenting on how much they loved the cupcakes and were so excited to find the "surprise" cherry inside!

I will HAVE TO make these again next year!
