Allrightythen......you're all invited to my place for a potluck Grin  Everything looks fantastic!!  

I also went with cupcakes.  Caramel Apple Cupcakes.  I saw this in the Taste of Home Fun Food magazine and had to try them out for the holiday -- they were a big hit and just plain ol' fun!!  The recipe in the magazine called for a box mix but I went ahead and substituted a spice cake recipe instead.

Caramel Apple Cupcakes
2 1/2 c. flour
1/4 c. cornstarch
4 teas. baking powder
1/2 teas. salt
1 teas. cinnamon
2 teas. ground ginger
1/2 teas. nutmeg
1/2 teas, ground cloves
1/2 teas. allspice
1 c. milk
3 large eggs
2 teas. vanilla extract
1 c. unsalted butter, softened
2 c. dark brown sugar
2 c. chopped peeled tart apples
Preheat oven to 350.  Line muffin tins with papers.  Mix dry ingredients in large bowl.  Mix milk, eggs and vanilla extract in smaller bowl.
Beat butter into dry ingredients, until mixture forms pea-sized pieces.  Add 1/2 of the milk mixture and beat until smooth.  Add remaining half of milk mixture and beat until smooth.  Add sugar, mix well.  Add apples, beat until incorporated.  
Pour batter into cupcake papers.  Bake for 20 minutes/toothpick test.  Cool for 10 minutes before removing from pans to wire racks to cool completely.
Caramel topping
Melt 20 caramel candies with 3 tbls. milk over low heat until smooth.  Spread over cupcakes.  Sprinkle with nuts of your choice, pictured with walnuts here.  Insert a wooden stick into the center of each cupcake.  Yumm-m-my!
