So, since I loved all the responses to the salad ideas thread (I even blogged about it for Craftster! Smiley ) I thought it would be great to have a wrap and sandwich thread!

My fave wrap is a Greek style wrap. For this one I was out of hummus, so I used a white bean dip I had made, spring mix greens, chopped tomato, feta cheese, and tzatziki sauce. Yum!

White Bean Dip

1 can white beans, rinsed and drained
2 wedges laughing cow light cheese (if you don't have this, I think 2 T of light cream cheese would be comparable)
2 t grainy mustard
1 t minced garlic
sea salt to taste
pinch of cayenne pepper
pinch of cumin
1 T chopped fresh parsley

Add all ingredients in food processor, blend until smooth and creamy. If it's two thick to move, add water 1 tablespoon at a time (I used 2 T total, actually lemon juice would be great for this part, I just didn't have any). Taste and adjust seasoning. Sprinkle with paprika for prettiness and refrigerate until nice and cold.

Another favorite topping of mine is an easy veggie mix. When I worked at Wendy's years ago it was called cucumber relish and it went on the pitas (anybody remember Wendy's pitas? yummy!). It's just diced tomato, cucumber, and red onion, but I love to have that mixed up in the fridge, it's great to throw a scoop onto salads, wraps, sandwiches, even scrambled eggs or pizza! I love easy ways of getting extra veggies into my meals, and a lot of the time I can do that just by having them pre-chopped in the fridge!

My fave sandwich is a BLT with Avocado on seedy bread.

I like doing a chicken salad type one. I'll buy a bag of chicken strips use most of it for tea one night and then for dinner the next day i'll put the leftovers with lettuce and cucumber and mayo Smiley

If only I had seen this thread earlier! We did the best wraps yesterday. We had leftover BBQ brisket and we turned them into Brisket and Cucumber wraps. They were nothing more than shredded brisket with my husband's cucumber salad and a bit of lettuce. Oh My! Smiley

Buffalo chicken (like leftover meat from a roast or leftover cold wings; or breaded chicken covered in buffalo sauce), with nice dark spinach, bleu or gorgonzola cheese sauce, and maybe some carrot or jicama shreds.

I love chicken salad wraps, too, with either lots of pickles/relish, OR a sweeter one with grapes, apples and cashews mixed in.

Sometimes I will do a Buffalo Chicken Wrap - regular tortilla filled with spicy buffalo chicken, lettuce, cheddar cheese, tomato, and ranch dressing. It's actually really good!

My back up lunch meal is thin sliced granny smith apples and creamy pb.  It makes me feel a bit like a five year old, but it's delicious.   Smiley

I love putting creamy chicken salad with mandrin oranges in a nice whole wheat wrap.

Basically I used a sandwich press to make the panini which was stuffed with heirloom tomatoes, buffalo mozarella, fresh basil, and some spicy calabrese salami.

I LOVE wraps.
Easy meal!
I love lots of chopped veggies & meat or chicken sald.  Here are a couple of my favs

Deli roast beef or left over roast beef shredded, w horseraddish, shredded carrot, a LITTLE ketcup and diced celery  yumma!!

diced or shredded chicken with grapes, maderine oranges, soy sauce, baby spinach.

shredded carrot & cabage with a tiny bit of mayo and maderin oranges

any left over veggies diced with a little italin dressing & cheese
