I have relied upon MorningStar Farms Meal Starters for far too long. Sure, it’s delicious, but expensive!  Undecided

Enter lentils. After making lentil-ricotta meatballs (as per this recipe: http://www.injennieskitchen.com/2010/02/lentil-ricotta-meatballs.html) and being damn surprised by the result, I began to concoct lentil-based mock meat ideas for my all-time favorite dish in the world: shepherd’s pie.

Our vegetarian shepherd’s pie recipe has been tweaked continually over the years, but it always relied on store-bought veggie crumbles. I’ve cooked this lentil-based version thrice so far and can safely say that it is just perfect. Even the omnivore boyfriend can't stop eating it. It's a lenient recipe, so ingredients can easily be substituted to make it vegan.


As a mega bonus, here's the nutrition facts label, which I calculated with Calorie Count's recipe analysis (available here: http://caloriecount.about.com/cc/recipe_analysis.php). The label represents one serving of eight total.

Looks delicious!  Cheesy I usually prepare mine with minced mushrooms, but now I have to try it with lentils.
