I could eat cantaloupe with every meal when they are in season. I decided this morning to create a cantaloupe salad and here's what I've created for tonight's dessert. Cantaloupe Salad
2 cups cantaloupe, cut bite size
1/2 cup apple, cut bite size
1/4 cup raisins
1/4 cup coconut flakes
1 1/2 cup vanilla yogurt
1 tsp orange zest
Zest orange and add it to the yogurt. Mix well and refrigerate so that the flavors will marry.
In a medium mixing bowl, place raisins and then cut up cantaloupe and apple over the top. (The liquid released from the cantaloupe and apple will help plump up the raisins a bit.) Add coconut. Mix well. Refrigerate until ready to serve.
Spoon yogurt over the top before serving.
I just "had to" eat my model! It was SUPER YUMMY!
