I could eat cantaloupe with every meal when they are in season. I decided this morning to create a cantaloupe salad and here's what I've created for tonight's dessert. Smiley

Cantaloupe Salad

2 cups cantaloupe, cut bite size
1/2 cup apple, cut bite size
1/4 cup raisins
1/4 cup coconut flakes


1 1/2 cup vanilla yogurt
1 tsp orange zest

Zest orange and add it to the yogurt. Mix well and refrigerate so that the flavors will marry.

In a medium mixing bowl, place raisins and then cut up cantaloupe and apple over the top. (The liquid released from the cantaloupe and apple will help plump up the raisins a bit.) Add coconut. Mix well. Refrigerate until ready to serve.

Spoon yogurt over the top before serving.

I just "had to" eat my model! It was SUPER YUMMY! Cheesy

My husband asked why I didn't add the orange! LOL! I was so focused on what I was doing to think of that before taking this picture. I'm adding it in just a few.

I usually do this without the coconut flakes or citrus zest. I'm going to have to try it because it looks fantastic!

I am looking to do a personal swap with (or will outright pay for) a knitter who could make an adult sized knitted t-rex sweater for Christmas. If anyone is interested, please let me know.
