I need to eat more vegetables, and I do love soup! Even though it's just about summer, I think I'll be making some of this. I can always freeze some! Thanks for sharing your recipe!

I could probably eat soup every day of the week, and since it's winter here, this recipe is perfectly timed! Thanks!

The thing about this soup is you can make it in the summer/fall when all the veggies are fresh, then freeze it and have it when it's cold out in the winter and get all your good vitamins. =)

Hehe, I guess it would have been clearer if I'd said "Thanks for the inspiration!" Obviously I won't be making your soup for a little while (unfortunately, it could be a very long while, because when the weather starts to warm up here in Aus, I'll be packing up and moving to Germany for another winter, and then back to Australia for my fifth winter in a row!), I will definitely be making some yummy roasted vege soup this week- I went to my local farmers market this weekend and picked out some lovely seasonal veges and I'm good to go! Cheesy

Yum!  With all the great summer vegetables that are available or soon to be available at the farmer's market, I will definitely be making this soup soon.  Thanks!

this looks so good. I'm not a soup lover, but this deserves an exception!

What a great use for all the super-cheap in-season veggies!  Silly question:  do you peel and seed the tomatoes before roasting?
