Mexican Bean Salad

(pic shows extra topping of olives)
~Serves 4 amply~

1 head of lettuce, chopped
1 large can (26oz.) ranch style beans, drained and rinsed
2 large tomatoes, chopped
3-4 green onions, chopped
½ pound cheddar cheese
1 bag Fritos
Catalina or Taco Sauce, for dressing

Toss or layer lettuce, beans, tomatoes, onions, and cheddar cheese. 
Top off Fritos (not pictured). 
Serve with Catalina Dressing or Taco Sauce. 

This recipe comes from my Mom’s kitchen.  She made this often in the summer.  It is quick to prepare and very filling.  You could add some additional ingredients and toppings such as black olives and sour cream.  You could also add 1 pound of cooled ground beef seasoned with taco seasonings.  Personally, I like it better without the meat. ~pinkleo

That looks delish, saving this recipe. I think I'll make it with olives, and no meat like you suggest!

Oh, yum!  My mom used to call this "No Drip Tacos," and serve it with taco sauce and sour cream.  It was a 'dad's working late' dinner, because she'd pick something we'd be sure to eat.

My mom used to make this too, we called it Charley Salad ( for some unknown reason).  I do like it with meat, or if you want to use some canned chili that makes it very good too.
