I love Mexican Food and have been getting into more elaborate Mexican recipes.  I found these two on www.allrecipes.com.

The recipe for Carnitas is pretty simple, it just takes time (1 1/2 hours to boil, 1 hour to sit, then shred, then fry).  It was all worth it in the end.  My boyfriend moaned a lot while he ate it.



I had never used raw tomatillos before but the guacamole was really good! It did need some salt though. Oh, and I didn't have the red onions the recipe called for so I went ahead and used green onions.

Thanks! I had a whole elaborate plan to make BBQ pork sandwiches with the leftovers but I think we'll just eat tacos again they were so good!

He doesn't like Mexican?? How can you LIVE without it?  Wait, where is he from? When I lived in Canada I had NO IDEA how good Mexican could be.

I should make that for dinner - I loooove avocados, but they don't love me, so if I have to eat them, I eat them at home!

an update - I made the tomatillo guacalmole (kick ass!! but needs coriander) and beef carnitas from a similar recipe on allrecipes.com (Ronaldo's Beef Carnitas - http://allrecipes.com/Recipe/Ronaldos-Beef-Carnitas/Detail.aspx).  I think my husband has died and gone to heaven.  a 1.4kg roast is almost gone  Shocked

Looks good!  Being a native Texan (who is now transplanted to Missouri), I have a lot of authentic Mex dishes from friends' parents and grandparents.  I'll have to dig through some recipe files, but when I find them, I'll PM them to you   Smiley
