will it presurve them if i cook put in the glass jars then put upside down so they become air tight? or will it go off because its not jam?

you would have to use a water bath to seal them properly.

And it would depend on the types of food you are putting into the jars also.

I can apple sauce every summer so it should work similar to that.

Find instructions for canning apple sauce and that should help.

It's not a good idea to do any kind of meat products, but you can do any kind of fruits and vegetables.

And the water bath is the right way to seal them.

When I made my own baby food I'd make a batch and freeze the food in ice cube trays. Fill the ice cube tray and cover with plastic wrap. Once they are frozen you can transfer them into freezer bags. They were easy to thaw and you could use as much or little as you want. You can use it for meat, vegetables and fruit. It might be safer than trying to 'can' the food since it might be hard to tell if any bacteria gets into the canned food.

I would not can foods for a baby because it's too risky. They have much weaker immune systems than adults. Jam/preserves/jelly usually have high levels of sugar which acts as a preservative. Apple sauce has pectin as well as natural sugars. Other foods may not so even if you put them in a hot water bath, there's no guarantee that bacteria (that don't need oxygen) won't grow (and you might not be able to tell if it has gone bad). Botulism is extremely dangerous to babies, which is why babies can't have honey. Even a few spores can make them very sick.

Ditto on not canning baby foods; the freezer is fine; if you were going to invest in something, get good storage bags, like the ones you can vacuum. Air is your enemy in the freezer.
