I couldn't find this anywhere when I searched, so I thought I'd add it. It's so delicious and one of my favourite tapas lunches with crusty bread and a salad. Smiley

Garbanzos con Espinacas

1 1/2 cups chickpeas (cooked jar measurement, but of course you can use dried)
2 bunches spinach
1 tbsp olive oil
3 garlic cloves, chopped
2 slices bread, cubed
1 tbsp ground paprika
1 tbsp ground cumin
250ml (1 cup) chicken stock
Salt to taste

Steam the spinach until just wilted, squeeze out excess water, then roughly chop. (or use a pre-cooked jar)

Heat the oil in a frying pan over medium heat. Add the garlic and fry for 1 minute, then add the bread.

Add the paprika and fry for a further minute. Take care this doesn't burn!

Add the stock and cumin to the bread and combine.

Place bread mix in a blender and mix to a paste. (Or use a hand-held one in the pan)

Return paste to the pan and add spinach and chickpeas, then stir to combine. Serve at room temperature.

I have loads of spinach in the fridge & I was just wondering what to do with it.  Thats for the great idea!
