I use eye glasses repair kit screwdrivers... and brute force. It can be painful. Also some of the watch backs twist on and off instead of prying off.

Etsy is a great source for small lots of steampunky bits and I'm a big fan of E6000 (glue) for stickage.  It smells pretty strong but once it sticks, nothing is coming off.
