We made this a few weeks ago and it was so pretty that I had to take pictures   Cheesy

It's a modified version of a recipe from Vegan Yum Yum

Instead of using lime, we used lemon juice because that's what we had.  We also substituted kale for collards and made some extra quinoa.  The recipe was super easy to put together and very tasty, I'd highly recommend it!

yay. i'm preparing to get back into eating HEALTHY vegetarian food again. i've too long been an anything-terian. totally sucks. this recipe is TOTALLY going in my repertoire.

also, i can't stop browsing through the archives of veganyumyum. :]

I am looking to do a personal swap with (or will outright pay for) a knitter who could make an adult sized knitted t-rex sweater for Christmas. If anyone is interested, please let me know.

Ooh! Thanks! I'm always on the lookout for new vegetarian recipes. I have a ton of recipes in which you marinate you tofu in soy sauce, rice vinegar and sesame oil and, what do you know, the tofu always tastes the same!  Undecided I can't wait to try this one!!!
