I made the shells and they were amazing!  Even my boyfriend and brother (self proclaimed carnivores who insist that their meals must have had a mother), really liked them!

I really want to try the quinoa bake!  It sounds delicious!

The eggplant lasagna looks delicious and seems simple enough to make even for a terrible cook as myself. But I wonder if I can omit the breadcrumbs?

You will need something as a binder for the filling, that's the job of the breadcrumbs. If you are gluten free and can't use bread, try rice cracker crumbs instead. If it's just a matter of taste you can try any kind of crumb or crushed flake, even cereal flakes (like corn or bran).

Oh okay, thanks! I was wondering what the reason for the breadcrumbs was. But that makes sense. I'll definitely have to try this recipe out. I've never made lasagna before, so wish me luck!

Oh delicious, those look glorious. I'm in the same boat as you - non-vegetarian, but often go for the meatless dishes! I think I may NEED to try those pumpkin ricotta shells.
