Has anyone made the 5 min a day artisan bread with rice or corn flour?  I've used the cookbook and made a few of the all-purpose and whole-wheat flour breads, but my niece is allergic to wheat and I wanted to try to make some bread for her.  If you've made it with rice flour, corn flour, or any other non-wheat flours, please let me know how it turned out!  Thanks!

You may want to try googleing for an all purpose gluten free flour recipe such as this one http://www.glutenfreecookingschool.com/archives/gluten-free-all-purpose-flour-mix/ rather then just substituting one type of flour. I have not tried bread with this recipe but had good luck with other things.

The authors' newer cookbook, Healthy bread in 5 minutes a day, has several gluten-free recipes. You might find some of them on their blog, www.healthybreadinfive.com. We've been making lots of whole grain wheat breads from it, and everything has turned out great, so I would definitely recommend the book in general.

I'm sure you know about this, but you need to be extra careful about cross-contamination.  You'll probably want to start with an unopened package of yeast if you reuse measuring spoons at all and verify that the yeast is gluten-free to begin with, just as one example.
