Has anyone made the 5 min a day artisan bread with rice or corn flour?  I've used the cookbook and made a few of the all-purpose and whole-wheat flour breads, but my niece is allergic to wheat and I wanted to try to make some bread for her.  If you've made it with rice flour, corn flour, or any other non-wheat flours, please let me know how it turned out!  Thanks!

You may want to try googleing for an all purpose gluten free flour recipe such as this one http://www.glutenfreecookingschool.com/archives/gluten-free-all-purpose-flour-mix/ rather then just substituting one type of flour. I have not tried bread with this recipe but had good luck with other things.

The authors' newer cookbook, Healthy bread in 5 minutes a day, has several gluten-free recipes. You might find some of them on their blog, www.healthybreadinf ive.com. We've been making lots of whole grain wheat breads from it, and everything has turned out great, so I would definitely recommend the book in general.

I'm sure you know about this, but you need to be extra careful about cross-contamination.  You'll probably want to start with an unopened package of yeast if you reuse measuring spoons at all and verify that the yeast is gluten-free to begin with, just as one example.
