I have made this bread several times,have never had a poor outcome! Here is a link to the recipe that I used  http://www.nytimes.com/2006/11/08/dining/081mrex.html?ex=1320642000&en=d5976d62a4577548&ei=5088&partner=rssnyt&emc=rss

I have subsituted 1 cup of wholewheat flour in this recipe 2 see how it would turn out, it turened out very nice. I have also tried adding raisins for raisin bread,it was very good! If you are wondering how my loaves turn out so nice and round...I bake the bread in my stainless steel pot lol Here are a ton of pics for you...

the amount of yeast is small is that why it takes all night to develope?
i dont know if i have a pot to cook it in. does it need the steaming of a lid?
i do have a big dutch oven pot for camp cookin but i dont think it would fit
in the oven.
would a casserole with lid work?
or foil over a tin?
i guess i could just try it lol
might go look for a pot at the shops
i make damper sometimes especially campin where i directly cook it on the coals in foil.
i used to make bread but the kneading sort a long time ago
i would love to try irish soda bread

Yes you can use a deep glass casserole dish that has a lid. I have done that before. I have a set of pots and pans that are totally stainless steel the handles too...thank goodness they have straight sides,it makes it easy to bake cakes and breads in them lol If I have a small roast to cook,I put it in a pot and throw it in the oven hehe If you do give this method a try please do take pics and tell us what you think about it. oki started but i couldnt find my cup measurement so had to use a 1/3 cup and somehow i think i put one too many flour scoops. i am adding a little extra water.

ok i have it wrapped in the teatowel stage
itlooked bubbly at 11am which is about 12 ish hours or so
i took photos wish i made a video i will for the next one
i got hubby to get the big camp pot out
but it looks huge
i dont know what a quart is i think its got to be a litre
and this pot maybe too big so will look what else i have too
exciting 2 hours to bake off! woo hoo . i love making bread.
if you look at my camping video on youtube i show some damper i made and cooked directly in the fire in foil. it was perfect.
we have a overnight sleepover at the scout hall this weekend for the joeys group my boys are in.
i am going to make damper there so i will make a new video.
imight make another batch now of this bread and video it.
it would be yummy to take to work for supper tomorrow night

ok it didnt rise so good
i wonder if i over handled it
and if the pot is too huge
i have anew batch on and i was extra careful on the volume of water
though i saw on tv tonight wholemeal flour  needs more water!
so i tooka peak andit does look ok
i wondered earlier if i needed a dash more
i plan on movin it to the pay directly after you take it out of the first bowl as i think when i moved it into the cookin pot it just flopped.
and i am going to use maybe even a loaf tin
and just use foil then  uncover.
i think that would work better for me
