Finally Fennel! Now I Need Ideas

I went to an organic feria in downtown San Jose today and there was fennel!  Something you rarely see here in Costa Rica. 

I am thinking f doing a roasted beet with orange and fennel salad.

Before I commit, I thought I'd see what others are doing with fennel.

I quite like fennel chopped into chunks & roasted with other veggies.  Remember you can eat the green herby tops too!

Fennel gratin is something amazing if you eat dairy. It's also a nice addition to spaghetti sauce in small doses.

Here it is one Bulgarian recepie with fennel. You need:

yogurth
cucumbers
garlic
salt
walnuts

You have to chop the cucumbers and mix the other stuff and add some water so you will have cold soup for the summer. Quantities are up to you.
