The other day, I was taking stock of what we had in our refrigerator.  Over the holidays, I had clipped coupons and combined them with sale prices to get a steal on refrigerated pie crust.  After making holiday pies, I still had some leftover.  I was going to make the classic chicken pot pie, but decided to branch out a little.  After considering my husband's love for spicy foods, and my love for convenience, I decided to make some easy hand pies.  They were yummy!  And the sour cream had a nice smoky and tangy flavor--a perfect complement.

Oooh yum! These look so tasty! I'm off of my college's meal plan (partially because it's WAY too expensive and also because the food is really really unhealthy and disgusting) and these empanadas look amazing and perfect for a lunch on the go for me! Thanks for the recipe!

Lickin' Flames:  I wonder if you could make empanadas or other types of hand pies by using one of those cheesy sandwich sealer irons.  Do you know the kind I mean?  They used to have infomercials for them, and I know my husband used his a lot in college in the dorm.
