Friday was my boyfriend's birthday and I wanted to make him cupcakes.  I could have just stuck with boring chocolate but decided to be a little adventurous and combine his favorite things. The cupcake itself is just a cake mix with a ball of cookie dough in the middle.  and the frosting is cream cheese frosting with little pieces of cookie dough (cookie dough in the frosting does not have raw eggs!).  hope you guys enjoy let me know if you want the recipe

So this recipe is a mix of about three different desserts but I got the idea from the blog 'how to eat a cupcake'.  the recipe is quite long just an fyi.

Cupcake:

1 pkg cake mix
1 pkg (3.4oz) pudding
1 cup milk
1 cup veg oil
4 eggs
1 tsp vanilla
1 pkg frozen cookie dough

I used chocolate cake mix and pudding, but you could always make this from scratch I was just lazy.  Anyways mix all those together with a mixer then take cookie dough and roll into ball and place on top of cupcakes then bake cupcakes for 20-22 min on 350 or until toothpick comes clean from cupcake (not cookie).


cookie dough for frosting:

1/4 cup butter (softened)
1/4 brown sugar
2 tsp water
1/2 tsp vanilla
1/2 cup flour
1/4 tsp salt
1/3 cup chocolate chips ( i couldn't find small ones so i chopped mine with a rolling pin)

cream butter and sugar in bowl.  Add water and vanilla then mix.  Then add flour and salt, then chips.  Wrap dough in wax paper and freeze for 30min.  Break dough into 1/4 tsp sized chunks, place on plate or plastic container and put in fridge until ready to put in frosting.

frosting:

1 1/2 cup heavy whipping cream
8oz cream cheese
3/4 cup sugar ( more or less depending on how sweet you want it)
1/8 tsp salt
1 tsp vanilla

Beat whipping cream in a bowl do not over beat.  then in a separate bowl combine cream cheese, sugar, salt, and vanilla (beat till smooth).  Fold in whipped cream and cookie dough chunks and then frost cupcakes.

Just an FYI when done making cupcakes refrigerate since the frosting has cream cheese in it.  I hope this helped if you have any questions let me know

I made these and they were delicious! but they went bad much faster than normal cupcakes, so be sure to have people to help you eat them Smiley

minathia, did you refrigerate them? We put ours in the refrigerator and they were good for about a week. But ya the cream cheese frosting probably made them not last as long next time i make these i'm just going to use regular frosting since i'm not a fan of the cream cheese.
