The other night, I came in from work and there wasn't any dinner made for me....so I invented a sandwich!! I took left over (couple of bites worth) salad, with salad dressing and I slapped it on some bread that I schmeared with Cream Cheese and then I sliced a couple of sharp cheddar slices to add to the general flavor of the sandwich and....mmmm it was good, and so was the avocado from the salad when it combined with the cream cheese and good bread.....

Last night I had two leftover twice baked potatoe halves(smallish potatoes)heated them up and had a salad on top of them with Ranch Salad dressing drizzled over everything.....

I just usually pull out something from my fridge. Tonight it was a bowl of lowfat cottage cheese and a roll I baked on Monday.

At times, it is whatever looks good, I don't care if it's dinner-appropriate or not. Usually I end up eating odds and ends, esp. if it's been a long day.

Chips and salsa.  They are my staple snack.  On days I come home from class and it's not actually meal time I break them out.  or recently yogurt!  My staple meals are sandwiches made with pita bread, turkey, sharp cheddar cheese, lettuce, and honey mustard.  salads with pretty much the same ingredients as the sandwich.  Or I found this asian seasoning packet that you mix with soy sauce and brown sugar.  I make a pot of brown rice, cook some chicken or a pork chop, made the sauce, and mix it all together.  but this is for the days I don't mind spending a little more time to eat.

I have a total pasta problem.  When I was working evenings, I would stumble in the door some time after midnight, throw some small shells in boiling water, suck down a yogurt and some almonds while the pasta cooked... just about EVERY night!  That remains my late-night food of choice, the act of filling the pot with water and getting out the parmesan cheese is almost automatic at this point Smiley
